Orange Sweet Potatoes

Ingredients

  • 5 medium oranges, unpeeled
  • 1/3 cup brown sugar
  • 1/2 cup brandy
  • 1/4 cup evaporated fat-free (skim) milk
  • 2 Tbsp reduced-fat margarine
  • 1/2 tsp salt
  • 4 cups cooked, mashed sweet potatoes
  • Dash nutmeg

Directions

Grate the peel from one orange. Cut the remaining oranges in half. Scoop out the pulp to yield 2 cups of drained fruit and save the shells.

Cut a thin slice from the bottom of each orange shell to make it sit flat. Sprinkle the orange pulp with brown sugar and set aside.

Heat the oven to 350 ° F. In a medium saucepan, heat the brandy evaporated milk, margarine, and salt. Add to the sweet potatoes and mix well.

Stuff each of the 8 orange shells with 1/2 cup of the sweet potato mixture. Sprinkle each shell with grated orange peel. Bake for 30 minutes. Garnish with a dash of nutmeg.
